This Zucchini bread is so moist and delicious. A great way for the kids to eat the veggies! Mine like to toast it and spread butter on top. If you wrap it on a pretty basic way like the parchment paper with a twine it gives it that “homemade look” and you can even write with a sharpie the names of the people you want to gift it to. Here is the recipe:
3 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp ground cinnamon
Sift all these ingredients together in a bowl
3 eggs
1 cup veggie oil
2 1/4 cup sugar
3 tsp vanilla extract
Beat all these ingredients very well in a mixer. After these mixture is creamy add sifted ingredients to it and mix very well.
2 cups grated zucchini
1 cup chopped walnuts
Add these last ingredients to the mixture and mix well. Pour mixture equally in 2 pans (8×4 loaf pans) and bake it in a previously preheated oven at 325 degrees for 45 to 60 minutes. Until you insert a toothpick and it comes out clean (without any batter residues). Let it cool down for 20 minutes when you take it out of the oven before cutting or packing.
