My older daughter turned 12 last Thursday. I have tried to make all her favorite dishes all week long. She is a true seafood lover so we have definitely been eating a lot of clams, crab and shrimp this week. I decided to make a fast shrimp dip. What a success it was! I will definitely make it again for Super Bowl because it was truly delicious! I want to share it with you because I’m sure it will be a hit!
Scampi Dip*
1 pound of shrimp (peeled, devined and chopped roughly)
2 tbsp of butter
1 tbsp fresh chopped garlic
1/4 cup of white wine
juice of one lemon
1 8oz package of cream cheese
1 cup of shredded mozzarella cheese (divided in half)
1/2 cup sour cream
2 tbsp of mayo
1/4 cup fresh chopped parsley
In a pan sauté the chopped shrimp with the garlic until the shrimp starts becoming pink. Don’t over cook otherwise the shrimp will be chewy. Add the white wine and lemon juice. Let simmer for a minute or two.
In a bowl mix the cream cheese, sour cream, mayo, parsley and half of the shredded mozzarella. Add the shrimp mixture to it. Mix it until well combined. Put it in a oven safe dish and add the remaining mozzarella cheese on top. Bake it in the oven for about 20 minutes when the cheese starts becoming golden brown on some parts.
Serve it with toasts. I cut “bias” a loaf of French bread. I add a little olive oil with a brush and bake them in the oven for about 10-15 min. Serve them around the dip dish. Enjoy!
