Lemony-cranberry holiday cocktail
What is that saying? If life gives you lemons…oh right! Make some kind of lemony cocktail!
Well…here it is a recipe I want to share with you that combines seasonal flavors like pomegranate and cranberries with a citrus hint of lemon and fresh mint. Just delish!
I’m posting this recipe for a holiday cocktail request of a very good friend of my husband and our family. Mr. Tommy Edwards this recipe is for you :)
2 cups of chilled pomegranate juice
1 cup of chilled cranberry juice
1 cup of vodka
1 cup of Cointreau (or any other orange liquor)
1 cup of chilled club soda
1/2 cup of fresh squeeze lemon juice (about 6 lemons)
1/2 cup of simple syrup
Fresh mint
Let me start explaining what is simple syrup just in case…it is equal parts of water and sugar bring to a boil until sugar granules disappear. After you make this you can store it when it cools off for about a week. This is what makes drinks sweet and good! These days they sell bottles of simple syrup at the stores but it’s so easy to make that you are better off making it yourself.
Mix all ingredients in a big pitcher or bowl and serve on glasses over ice. You can add some mint to the mixture or just add to each glass before serving. Forgot to mentioned that you can also dye coarse sugar with green color in a ziplock bag and wet the rim of each glass on simple syrup and pass it through the sugar for a cool way to serve. TGIF! and I start the weekend with homemade peruvian eggnog!

Eggnog is a traditional Christmas drink (you can have it with alcohol or without) and the entire family can enjoy together. In Peru we call it “Rompope” (Rum-po-pay) and according to my mom’s tale, my grandma would make it for all the kid’s birthdays and every holiday. All the kids would wake up to the noise of 2 forks beating the eggs early in the morning when my grandma started the celebrations making this delicious and creamy drink. Forget about whisks or kitchenAid mixers! She would do it the old school way with 2 forks against a metal bowl. Love it!!! I now have it so much easier but the recipe is the same. And I, just like my mom and grandma always look for reasons to celebrate with our loved ones.
Here is my recipe that I guarantee you you will love, love, love!
Peruvian Rompope (eggnog)
8 eggs
1 can of condensed milk
3 to 4 cans of peach halves
1 tsp of vanilla extract
2 cups of rum (if desired with alcohol)
Cinnamon sticks and cinnamon powder
Blend the eggs for about 3 to 4 minutes until they are very creamy, add condensed milk, peach halves and vanilla extract and mix very well. Add rum slowly so the alcohol blends with rest of mixture. Blend some more. Serve in glasses and add cinnamon powder and/or a cinnamon stick to use as a stirrer. Cheers!
